From 12 to 26 February 2025, guests at Badrutt’s Palace Hotel will experience two special weeks when Santiago Lastra, the MICHELIN award-winning chef of the internationally acclaimed London restaurant KOL, will be cooking for guests with his London team, bringing KOL’s unique style of hospitality to Switzerland. Under the title ‘A Taste of Mexican Innovation Meets Swiss Elegance’, the Mexican chef presents KOL's visionary cuisine for the first time in a residency outside London.

Innovating and Elevating Mexican Cuisine
Chef Lastra has amassed international recognition in a very short space of time, in 2024 placing 17th in The World’s 50 Best Restaurants. This was achieved with a commitment to replicating Mexican flavours, using seasonal, local ingredients, innovating and elevating Mexican cuisine in London to a level not seen before. In St Moritz, Santiago will present some of his signature dishes such as Nicotatole; a technique used to create custard, traditionally from masa and fruit juice, here Santiago forgoes fruit for bright yellow pepper, served with crème fraîche, caviar and seasonal flowers.
